Issiki Cutlery Professional 8 inch Chef's Knife

Issiki makes a regular pattern of kitchen knives for an affordable price. We were sent this knife for a review. This classic Chef style knife seems to be the best out there on the market. Except for one problem; the edge.

First off, before I begin my review I want to say where the best place to purchase this knife would be. It's amazon. Simply search Issiki Cutlery and you can look through all of the products that they have for sale. Ok, lets start with the fit and finish. The knife feels astounding to hold in hand, the polished pakkawood handle feels comfortable to hold in hand, and the mirror finish on the blade is near perfect. The engraved logo on the blade was one thing I wasn't going to be exicted about, however, they have done an excellent job with it. It is a full tang blade and has a stainless steel guard. Their logo isn't annoying and it doesn't get in your way when you are using the knife. The blade is said to be made of high-carbon stainless steel but it does not tell you what kind of steel it is. I would guess it is either 306 or 316. When the knife arrived it was EXTREMELY sharp, meaning it could slide through cardboard like literal butter. Some may say that they would want to have a knife arrive dull but it would be harder to sharpen the knife upon arrival than it would be to dull it. As said before, the pakkawood handle is extremely comfortable and it fits my hands well. There is one problem however that can greatly effect your effectiveness with this knife. The edge dulls quite easily and constant sharpening is very annoying to do. I used some materials to simulate kitchen use and then divided the strength of that object to equal the kitchen use. We used it on wood for whittling and batoning for strength tests. Just buy a whetstone and you will be set.

In conclusion the Issiki Professional 8 inch Chef's Knife is an astounding kitchen knife for the price. The fit and finish is absolutely mind blowing. The only problem with the knife is the fact that the edge wears off easily, which is a no-go for most. Overall I give this knife an 8/10. Marking off 2 for the edge.
